Oooh sometimes in my dairy-free, wheat-free – mostly sugar-free life – I allow myself a wee treat or two. This week I found two ‘naughty’ items at my local organic grocer that sparked my imagination – a Halloween Hot Chocolate Recipe!
First, presto-ready coconut whipped cream in a can – at the push of a nozzle!:
Secondly, natural pumpkin-spice marshmallows:
So I decided to make this scrumptious Halloween Hot Chocolate:
Halloween Hot Chocolate Recipe – Dairy-Free, Reduced Sugar
Heat a mug’s worth of your choice of almond, coconut, cashew, hemp milk etc. in a small saucepan
Whisk in about a teaspoon of unsweetened cocoa powder:
Then sweeten with a tiny spoonful of KAL Stevia:
And if I want to mask the stevia taste, I add about this much non-GMO Xylitol:
Drop a few marshmallows in the mug (to support the whipped coconut cream):
Lastly, top with the whip cream, some shaved chocolate and a few more marshmallows:
And YES. This really does taste as good as it looks!
The marshmallows and the coconut whipped cream both contain sugar, but by using stevia/xylitol to sweeten the hot chocolate, we do avoid a considerable amount (versus a ‘normal’ hot chocolate).
